Italian Sausage and Peppers Skillet Recipe

Everything cooks in one pan, the ingredients are easy to find, and it’s just as good served with a fresh green salad as it is with warm garlic bread to soak up all those savory juices.

The Good Stuff

Italian sausage links
Use mild or hot depending on your preference. Slicing the sausage into 1-inch pieces helps it cook evenly and gives you more browned edges, which means more flavor.

Bell peppers
Any color works here—red, yellow, orange, or a mix. Cut them into bite-size pieces so they cook evenly and are easy to scoop up with each bite.

Red onion

How to Make It

Heat a large skillet over medium heat. Add the sliced Italian sausage and cook, stirring occasionally, until the pieces are browned and cooked through, about 8–10 minutes.

While the sausage cooks, cut the bell peppers and red onion into bite-size pieces and mince the garlic.

Once the sausage is fully cooked, remove it from the skillet and set it aside. Leave the grease in the pan—this adds a lot of flavor to the vegetables.

Add the red onion to the skillet and cook for 2–3 minutes, stirring occasionally, until it begins to soften and turn slightly translucent. Add the minced garlic, Italian seasoning, salt, and black pepper, and cook for another 1–2 minutes until fragrant.

Add the bell peppers to the skillet and cook for a few minutes, stirring occasionally, until they soften but still hold their shape.

Return the sausage to the pan and stir everything together. Cook for another 2–3 minutes, until the peppers are tender-crisp and everything is warmed through.

Remove from heat and top with shredded Parmesan and/or fresh parsley if desired. Serve warm with a green salad, garlic bread, or both.

Method
 

  1. Cook sausage in a large skillet over medium heat until browned and cooked through. Remove and set aside.
  2. Add onion to the same skillet and cook for 2–3 minutes until starting to soften.
  3. Stir in garlic, Italian seasoning, salt, and pepper; cook until fragrant.
  4. Add bell peppers and cook until tender-crisp.
  5. Return sausage to the pan and cook 2–3 minutes more.
  6. Top with Parmesan and/or parsley if desired and serve warm.
